It works but the main functionality I want is the ability to pin an app to my taskbar at the bottom of my screen so I don't even have to open firefox to open the web app, the fact that this cannot be done completely defeats the purpose of this extension to me. the web app just opens as a separate firefox window and not really as a separate app like on google chrome

Totally fair. Also you can't resize the window on windows! Oof. I normally use this extension on Linux where it works for my purposes.

https://cup.aihedy.com/en-US/firefox/addon/pwas-for-firefox/ might work for you, but requires an external program to manage separate user profiles and/or firefox installations.
